Delicious Mango Tilapia Recipe…

Fruit with fish? Absolutely! This is no ordinary fruit though. This delicious mango salsa is an explosion in your mouth! The juicy mango is paired with crunchy red peppers and onions and let’s not forget the jalapenos because some like it hot!┬áThere’s no need to go to Bonefish for a delicious tilapia dish when you can make this mango tilapia recipe at home for about a tenth of the price.

Note: This tilapia recipe is perfectly paired with the side dish Healthy Roasted Vegetable Medley Recipe because I use a lot of the same vegetables. This saves time and money.

Servings: about 4

Ingredients for the Tilapia Marinade

  • 4 tilapia filets (about 1 lb)
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Old Bay Seasoning (because you never make fish without it)
  • 1/2 tablespoon Blackened Seasoning
  • 1 tablespoon minced garlic
  • 1 teaspoon dried basil
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper

Ingredients for the Mango Salsa

  • 1 large ripe mango, peeled, pitted and diced
  • 1/2 red bell pepper, seeds removed and diced
  • 2 tablespoons red onion, minced
  • 1 jalapeno pepper, seeded and minced or 2 tablespoons of minced from a jar
  • 1 tablespoon chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon lemon juice
  • salt and pepper to taste

Instructions:

  1. Marinate the fish for one hour: Place filets into a glass bowl. Whisk together all the ingredients for the marinade and pour over the filets and turn to coat.
  2. Cover and place in the refrigerator for 1 hour. You can also marinade the fish in a sealable plastic bag.
  3. Prepare the mango salsa by combining the mango, red bell pepper, red onion, jalapeno pepper and cilantro in a bowl. Add the lime juice and lemon juice.
  4. Gently stir the ingredients. Season to taste with salt and pepper, and refrigerate until ready to serve.
  5. Spray a cast iron pan or a grill pan with nonstick spray and cook until fish is no longer translucent and flakes with a fork. (About 3-4 minutes on each side). You can also cook the tilapia by broiling it in the oven.
  6. Serve the tilapia topped with mango salsa.
